Sunday Confessions #107

  Hey Sunday. If you haven't heard, we finally found a car. A brand new 2021 Jeep Grand Charokee L Limited. That's a mouthful. Picture of it is up on the menu for Monday, here is you want to check it out. What a whirlwind of a buying process. I don't want to have to deal with that for a long time. On top of all the car drama, my baby boy turned 8. That kid is one of a kind, being dubbed Captain Cranky. Love all my boys. Lets get to the recap. Recipe: Bruschetta Chicken

  I came across this recipe a few years ago when I need something simple to make after a long weekend. This is now one of my families favorites and my in-laws are now making it as well. You just can't go wrong with simple.  Course: Main Course Servings: 2- 4 people Time to Make: 20 Minutes Ingredients: 1 Tbs Olive oil 1 lbs Boneless chicken breast 1 Package Knorr rice sides - Creamy chicken flavor 1/2 Cup shredded mozzarella Roma tomato Basil Instructions: 1. Heat oil in a pan on medium-high heat. Pound chicken breast to about a quarter to half inch thick and cook in pan until done. About 4 minuets on each side. 2. Prepare Knorr rice side according to package. (I like to use a sauce pan, but some have used the same skillet after the chicken is done cooking if you want to cut down on your dirty dishes.) 3. Stir in tomatoes and sprinkle with mozzarella and basil. You can either cut up the chicken breast or serve whole. I also like to add extra Mozzarella to the rice.

Weekly Menu #414 And The Book Of The Week

  Monday, Monday! We are back and I have to say thank you for everyone who was thinking and praying for my Grandpa, he made it another week. Not sure if that's a good thing or not at this point, but we shall see. If he is meant to stick around longer, then that's ok with me. On a more positive note, we managed to find a new car. Not the one we were originally looking at, but it checked all the boxes and I'm really happy with it. Welcome, Plump Vernon to the family, my 2021 Jeep Grand Cherokee L Limited. It's so fancy... Almost too fancy, lol. I'm grateful to my husband for dealing with the dealer while I sat in comfort at home. To think that only a few short years ago we were barely scraping by, and now with a lot of hard work, we can afford a beauty like this.  This weeks book is No Prisoners by Karen Traviss.
