Recipe: Open-Face Egg Salad Sandwich

  This is a delicious lunch idea that can be prepped ahead of time for quick assembly.  Greek yogurt can be added in place of the mayo to give it a little extra tang. Green onion and radishes are also an awesome addition if you want a little more crunch. I used gluten free bread since that is my preference, but any kind of bread will do. You can also use fresh slices of avocado instead of the guacamole, or pepper instead of paprika. The options are endless.  Ingredients 1 table spoon of mayo a dash of mustard a dash of salt 2 hard-boiled eggs 2 slices of bread 1/4 cup spinach 2 tables spoons guacamole Paprika for seasoning Instructions 1. To make egg salad: In a small bowl combine peeled eggs, mayo, mustard and salt. Chop up using a fork or knife and mix together well. 2.   Hello Monday! Spring is here and with it, the birds are singing and the rain has settled in for the long hull. Its not all bad. The weather will soon turn warm and sandal weather is upon us. I'm down for that. This weeks read is Highland Warrior by Heather McCollum. I read the first book in this series a while back and am now excited to dive into this one. It sounds like its going to be a doozy. Who's with me? I hope you enjoy this weeks menu. My husband and I are trying to cut back on some of the more fatty meats and try some vegan recipes. According to a documentary my husband watched (he's obsessed with documentaries) Cutting back on meats in general is supposed to help with soar achy muscles as you get older.
