Recipe: Bruschetta Chicken


I came across this recipe a few years ago when I need something simple to make after a long weekend. This is now one of my families favorites and my in-laws are now making it as well. You just can't go wrong with simple.

Servings: 2-4 people

Time to Make: 20 Minutes


1 Tbs Olive oil
1 lbs Boneless chicken breast
1 Package Knorr rice sides - Creamy chicken flavor
1/2 Cup shredded mozzarella
Roma tomato


1. Heat oil in a pan on medium-high heat. Pound chicken breast to about a quarter to half inch thick and cook in pan until done. About 4 minuets on each side.

2. Prepare Knorr rice side according to package. (I like to use a sauce pan, but some have used the same skillet after the chicken is done cooking if you want to cut down on your dirty dishes.)

3. Stir in tomatoes and sprinkle with mozzarella and basil. You can either cut up the chicken breast or serve whole. I also like to add extra Mozzarella to the rice.
