Recipe: Open-Face Egg Salad Sandwich

 

This is a delicious lunch idea that can be prepped ahead of time for quick assembly. 

Greek yogurt can be added in place of the mayo to give it a little extra tang.

Green onion and radishes are also an awesome addition if you want a little more crunch.

I used gluten free bread since that is my preference, but any kind of bread will do. You can also use fresh slices of avocado instead of the guacamole, or pepper instead of paprika. The options are endless. 

Ingredients

1 table spoon of mayo
a dash of mustard
a dash of salt
2 hard-boiled eggs
2 slices of bread
1/4 cup spinach
2 tables spoons guacamole
Paprika for seasoning




Instructions

1. To make egg salad: In a small bowl combine peeled eggs, mayo, mustard and salt. Chop up using a fork or knife and mix together well.

2. Toast the bread and top with guacamole, a layer of spinach and the egg mixture. Season with paprika.
