Recipe: Feta and Spinach Chicken Patties

 


This happens to be one of my favorite summer recipes. A go to recipe when I want something light and healthy. You can serve them over a salad or on top of rice or steamed veggies. There are so many options.

This recipe takes about 15 minutes to prep and another 10 minutes to cook. Makes about 10-15 patties.

Ingredients

2lbs. Ground chicken
1 Large egg
1 Cup almond flour
1 Tsp. Garlic powder
1 Cup spinach, finely chopped
1/3 Cup Feta cheese
1/2 Tsp. Salt
1/4 Tsp. Pepper
2 Tbs. Oil for frying

Instructions

In a large mixing bowl, combine ground chicken, egg, almond flour, garlic powder, spinach, salt and pepper. Mix together well.

Roll mixture together into about 1 inch balls and place aside.

Heat a large skillet on medium/high heat and add oil for frying.

Add each meat ball to the pan, pressing them flat with the back of a spoon or spatula. They should be about a 1/4 inch thick.

Cook for about 4-5 minutes on each side. Make sure they are cooked through with an internal temperature of 165 degrees.

Serve over a bed of lettuce or rice. I like to top mine with a vinaigrette. My favorite is Ken's Simply Vinaigrette Caesar.
