Last Friday, my friend Amy and I hit the town at a little well known place called "The Margarita Factory." A favorite of ours for those weeks when the girls just need to remove ourselves from our normal lives for a little bit and have fun.
We had some drinks and ate some amazing food. Amy ordered the Pollo Con Mole and I got the Pollo Cancun. Yes, it was a chicken kind of night. After glancing over at the bar and noticing one of the bartenders crushing ice vigorously while making eye contact with me (Shocker) I focused on my dinner, breaking it down flavor by flavor until the inner foodie in my was sure I could recreate the dish.
This weeks Blog find is a delicious Mexican White Sauce recipe as part of my search to make the ultimate Pollo Cancun. This recipe came from the Fabulous Ms, Love, over at Munchkin Time. She has some amazing recipes, crafts and DIY projects you have to check out.
Top this on a thin chicken breast, with Spanish rice, refried beans, Pico de Gallo and sautéed mushrooms to make the best Pollo Cancun. Once I gather all these ingredients, I will be sure to share the recipe.
