Recipe: Hearty Taco Soup


Are you ready for a hearty taco soup recipe? To tell you the truth, its more of a taco dip, but we eat it as a full meal and its delicious. It started out as a soup recipe and we've added on to it.

I've been making this recipe for about 10 years now, and the reason why I haven't shared it yet is because trying to take a photo of this color and consistency of food doesn't always work. This time around, I finally found a way to highlight the dish without it looking unappetizing. I'm salivating just looking at the picture. 

The texture is creamy and the ranch seasoning gives it a delicious tang. Perfect for an appetizer, or just as a meal. Can be done without the meat, or you can add corn and black beans for a more customizable dish.  

Ingredients

1 Yellow Onion
1lb ground beef
Garlic
1 packet taco seasoning
1 packet of ranch dip seasoning
1 can of diced tomatoes
 1 can of tomato paste
16 oz sour cream
8 oz cheddar cheese (or your favorite cheese) 
Tortilla chips or Fritos (We like Scoops)

Instructions

1. Dice onion. We prefer smaller pieces because they are easier to scoop. 

2. In a deep pan over medium heat, cook ground beef and onion until cooked through.

3. Drain any grease and place pan back on the heat.

4. Add garlic, taco seasoning and ranch seasoning, stirring until completely mixed in.

5. Stir in diced tomatoes, tomato paste and sour cream. Let cook until heated through.

6. Add cheese to and stir until melted.

7. Serve right away with your favorite tortilla chip or Fritos Scoops.
