Needed: Recipe testers

The one thing I thought I was losing when I found out I had to eat gluten free was pizza, but when I realized that there was an easy gluten free option, I had to try it. These are the toppings we love, but you can put what ever it is you like on your pizza. Enjoy!

-         1 package of Bob’s Red Mill gluten free pizza crust mix
-         1 ½ cups warm water
-         2 Eggs
-         4 Tbsp Olive oil
-         Basil
-         1 can Pizza sauce or tomato sauce
-         2 cups Mozzarella cheese
-         ½ cup Medium cheddar cheese
-         7 oz Pepperoni
-         5 oz Canadian bacon
-         Half a red onion, sliced
-         Half a large green pepper, sliced

Pre heat oven to 425 degrees.
Prepare pizza crust according to packaging. Add basil to crust mix before letting it rise for 20 minutes.
 Cover 16” pizza tray with non stick spray and spread crust evenly over tray. Brush crust with 2 tbsp olive oil. Cook in oven for 7 to 9 minutes without toppings.
Remove from oven and top with sauce, mozzarella, Canadian bacon, pepperoni, slices of red onion, slices of green pepper and top with cheddar cheese.
Put pizza back in oven and bake for an additional 15-18 minutes or till desired crust.

Writing Prompt 9-29

Boring, Oregon? Oh hell, I don't know. I'm not feeling very creative today.

Menu: Week 13


My Phoenix is 6 years old today! I cant believe how time flies. It feels like it was just yesterday that we were waiting for his arrival and now he is wearing size 8 pants. Why does he have to be so tall? Oh, that's right, because his Grandpa is so tall. Genetics :)
Here is this weeks menu. There are some repeats from last week because we didn't make those dinners.

S'mores Poke Cake

In celebration of my oldest son's 6th birthday I wanted to make him a S'mores poke cake. I've never made this recipe before but it seemed to turn out ok even though I couldn't eat it. (Not gluten free)
Ingredients
  • 1 box chocolate cake mix + the ingredients on the back of the box.
  • 1 can (14 ounces) sweetened condensed milk
  • 1 cup hot fudge ice cream topping
  • 1 cup marshmallow fluff
  • 1/2 cup graham crackers, crushed
  • 1 container (8 ounces) Cool Whip
  • 3.4 cup mini chocolate chips (optional topping)
  • 1/2 cup mini marshmallows (optional topping)
  • 1/2 cup graham crackers, crushed (optional topping)
  • Instructions
    1. Prepare the cake according to the directions on the box.
    2. Once the cake is completely cooled, use a wooden spoon to poke holes evenly throughout the cake, making about 25-30 holes.
    3. Pour the sweetened condensed milk evenly over the cake, trying to fill up the holes.
    4. Combine the hot fudge topping, the marshmallow fluff, and the crushed graham crackers in a medium sized bowl. Microwave the combined toppings for 15 seconds or until melted together and warm.
    5. Spread the marshmallow fluff and hot fudge topping on top of the cake, trying to get some in the holes. Then spread the Cool Whip on top.
    6. Refrigerate for at least 4 hours or overnight. When ready to serve if desired, sprinkle the mini chocolate chips, mini marshmallows, and crushed graham crackers on top. This makes about 12 large pieces.

Writing Prompt 9-28


  1. Rewrite my book so it matches whats in my head.
  2. Get my book out to literary agents.
  3. Have one agent request a full manuscript.
  4. Start on the sequel :) 


Pancake Muffins

This has got to be one of the easiest recipes I have ever tried, plus my boys love them cause they think they are eating a muffin. Little do they know it has a lot less sugar. :)
All you need is:
  1. Your favorite pancake mix
  2. Your favorite topping (Chocolate chips, fruit, Bacon)
Told you it was easy.

 Preheat your oven to 350 degrees. 
Mix the pancake mix according to the box instructions.
Spray your cupcake tin with nonstick spray (I forgot this part and hand a heck of a time removing the muffins from the tin)
Pour mixture into tin and top with your favorite topping.
 Bake for 12-14 minutes and let them cool before removing from tin.
 I told my kids to have at it and eat all the muffins. I wonder if they really can.

Maybe it was the way her eyes looked at me as the life drained from her soul, or maybe it was the way her body went ridged then limp. Either way the only color I can remember was the grey of the sky as the rain poured down around us. It was so empowering, yet a blur of nothingness. I will never forget its cold shoulder. It turned its back to us as she slipped from my life forever.

Menu: Week 12

We rescued a 3 week old kitten this week. Someone at work found a whole littler, 5 in all. This was the last one not spoken for. I snatched her up right away. She reminds me of a cat I used to have called Coco. I miss that cat.

On another note, Liam will be 2 months tomorrow. My how time flies. He's wearing 6 month clothing already and eats like a little piggy. That's my boy!

On to the festivities. Here is my week 12 menu.

Got fruit flies?

Back in August we took a family trip for 4 days to the beach. I made sure I cleaned up all the dirty dishes before we left so we wouldn't get flies in the kitchen (Or did I?) When we came home the kitchen was full of flies and I realized I had left a kids jamba juice cup on the counter.
It is now mid September and I still have a billion fruit flies in my kitchen. I've tried everything and none of it has worked very well until I came across this recipe on Pinterest today. I tried it and within an hour this is what I got,
I couldn't believe it.

Here is what I did:
Wide top container
Half full of apple cider vinegar (must be apple cider)
A few drops of soap
Fill the rest with water

Now watch the carnage begin!

Menu: Week 11

It has been a long week but I am grateful the rain is back. There is something about the sound and smell that soothes my overloaded mind. Even a little thunder is a welcomed sight. 
We are finally getting used to Phoenix being in school. I talked to his teacher Thursday and she suggested skipping some of the lessons he already knew and just taking the tests. That way he doesn't get bored. I'm really glad that we decided to "home school" him.

Menu: Week 10

Its been a tough last few days. I've come to find out that I have celiac disease and cant have gluten any longer. I'm really grateful that we have been changing our diets and making meals at home more often because it has made this transition that much easier, all though it has not been easy at all.
I've had to modify a few of my menu items to include gluten free foods. It's all trial and error from here on out to find out what works and what doesn't but it will be worth it in the end. :) Enjoy!

Liam at one month

I can't believe that my little monster is already one month. Took a few photos of him while I was in between photo sessions at Mcmenamins Edgefield. 





Menu: Week 9

Ever since Jason and I have been preparing a weekly menu we've saved a lot of money and time.
On top of that, we haven't eaten the same thing twice in the last 8 weeks. Not bad if I say so myself. We've been eating more healthy and been able to spend more time together as a family, something we really didn't do much of when we ate on the fly all the time. I am blessed with a great husband who cooks most night while I pick up the kids and children who, although refuse to try most things, still like brown chicken (Beef).
