For the Meatballs:
500g (1 lb) chicken mince
100g (3.5 oz) feta, crumbled
1 large zucchini, grated
Zest of 1 large lemon
1 egg
2 cloves garlic, minced
½ cup breadcrumbs
½ tsp salt
20g (a handful) fresh herbs: dill, mint, parsley – chopped
Pinch of black pepper
Olive oil, for brushing or spritzing
For the Giant Couscous:
1 cup giant couscous
1½ cups water
Big pinch of salt
1 tsp olive oil
5g (1 Tbsp) chopped dill
Juice of ½ lemon (about 20 ml)
For the Cucumber Salad:
1 large cucumber, thinly sliced
1 red onion, thinly sliced
Juice of ½ lemon (about 20 ml)
Salt and pepper to taste
