Chicken Kofta with Roasted Vegetables
- Ground Chicken (500g)
- Onion (1 medium)
- Garlic (3 cloves)
- Fresh Parsley (1/4 cup)
- Ground Cumin (1 tsp)
- Ground Coriander (1 tsp)
- Salt (1 tsp)
- Black Pepper (1/2 tsp)
- Plain Yogurt (1 cup)
- Lemon Juice (2 tbsp)
- Olive Oil (2 tbsp)
- In a mixing bowl, combine ground chicken, chopped onion, minced garlic, and parsley.
- Add ground cumin, ground coriander, salt, and black pepper; mix until combined.
- Shape the mixture into elongated oval koftas.
- Preheat grill or grill pan over medium-high heat; brush with olive oil.
- Grill koftas for 5-7 minutes on each side until golden brown and cooked through.
- For the sauce, mix plain yogurt with lemon juice and a pinch of salt in a small bowl.
- Serve hot with garlic yogurt sauce and your choice of sides.
