Ground Beef Taco Bowls

 

Ingredients

  • 1 lb (454g) Ground Beef 85/15 or 90/10 lean
  • 1 cup (185g) Long-Grain White Rice Rinsed
  • 2 cups (475ml) Water For cooking rice
  • 2 tbsp (15g) Taco Seasoning Chili powder, cumin, garlic, paprika
  • 1 can (425g) Black Beans Rinsed and drained
  • 1 cup (150g) Sweet Corn Canned or frozen
  • 2 medium Tomatoes Finely diced
  • 2 cups Iceberg Lettuce Shredded
  • 1/2 cup (120g) Sour Cream Full fat, thick
  • 1/4 cup Fresh Cilantro Chopped

Instructions
 

Cook the Rice

  • Rinse rice under cold water. Combine with 2 cups water in a saucepan and bring to a boil.
  • Reduce heat to low, cover, and simmer for 18 minutes. Let stand for 5 minutes then fluff.

Prepare the Beef

  • Heat oil in a skillet over medium-high heat. Brown the beef until crumbled and fully cooked.
  • Add taco seasoning and 1/4 cup water. Simmer until a thick reddish-brown glaze coats the beef.

Assemble the Bowls

  • Place rice in bowls. Arrange beef, beans, corn, tomatoes, and lettuce in distinct sections.
  • Add a dollop of sour cream to the center and sprinkle with fresh cilantro.
