Ingredients
Main Recipe
- 1 lb (454g) Ground Beef 85/15 or 90/10 lean
- 1 cup (185g) Long-Grain White Rice Rinsed
- 2 cups (475ml) Water For cooking rice
- 2 tbsp (15g) Taco Seasoning Chili powder, cumin, garlic, paprika
- 1 can (425g) Black Beans Rinsed and drained
- 1 cup (150g) Sweet Corn Canned or frozen
- 2 medium Tomatoes Finely diced
- 2 cups Iceberg Lettuce Shredded
- 1/2 cup (120g) Sour Cream Full fat, thick
- 1/4 cup Fresh Cilantro Chopped
Instructions
Cook the Rice
- Rinse rice under cold water. Combine with 2 cups water in a saucepan and bring to a boil.
- Reduce heat to low, cover, and simmer for 18 minutes. Let stand for 5 minutes then fluff.
Prepare the Beef
- Heat oil in a skillet over medium-high heat. Brown the beef until crumbled and fully cooked.
- Add taco seasoning and 1/4 cup water. Simmer until a thick reddish-brown glaze coats the beef.
Assemble the Bowls
- Place rice in bowls. Arrange beef, beans, corn, tomatoes, and lettuce in distinct sections.
- Add a dollop of sour cream to the center and sprinkle with fresh cilantro.
